I hosted an event over the weekend for a guided meditation followed by a Mandala colouring event. I made an awesome playlist (which I will post a link to once I organize it on YouTube) and I also made some yummy treats. This was a bit of an experiment (like all my recipes tend to be) but it turned out to be yummy and pretty interesting, I used chia seeds in lieu of eggs but added a lot more than I would have if I was trying to match a typical recipe, and the result turned out to make this Super Moist Banana Nut Cinnamon Loaf.

I also recently decided to start up a mini side business for my food, which is called Kindred Kitchens and as of now, it’s just a catering business for my Kindred Spirits events but I am working on taking things to the next level, which means I have to have a food inspector come in and check out my kitchen and cooking premise. I am currently re-organizing my home to accommodate cooking classes there. I’ll share more about this and some pics in another blog post. I am taking this week to dedicate to working on getting this blog up and running properly! So that means saying ‘NO’ to events, people and anything that doesn’t directly involve work or benefit me. If it takes away from my time or consumes my energy so that I can’t work towards my goals for setting up my new cooking and food business, then I don’t have time for it. It’s my mini-vacay, not from my place but from people and I need it to just focus on me. MAN, that feels so good. Knowing I can get things organized and figured out without distractions, disturbance or interference. It’s day one… let’s see how much I get done by next Tuesday. 🙂

Okay, anyway, back to the recipe…. this was really yummy and I posted it on mealgarden.ca to see the nutritional info and once again, it got a green leaf rating means it’s super healthy! Yay, go me and my green, clean eating! You can cut portion sizes a bit bigger, I was supposed to have close to 20 people at the event so I made 24 pieces and that’s what the nutrition info (shared below) is based on. Here’s a little pic in which you can also see the little logo I designed. I think it’s pretty nice considering I had to make it very last minute. The symbol is an Angelic symbol meaning Optimal Health, which is what I strive for by creating healing through nutritional ingredients but also by promoting healthy, nurturing relationships with food and amongst the people who share it. banana-nut-loaf

Rolled oats- Gluten Free



ground into powder




Baking powder, gluten-free

1 1/2




packet (individual)






Chia seeds, dried



Sunflower seeds


cup hulled

raw, unsalted

Coconut oil



Baking chocolate, unsweetened

1 1/2






for soaking chia



1. Preheat oven to 250F
2. Soak chia seeds in 3/4 cup water. Set aside for 20 minutes until chia seeds are moist and water is absorbed.
3. Peel and mash bananas in a large mixing bowl, add coconut oil, cinnamon, stevia, baking powder.
4. Grind rolled oats in a coffee grinder until it’s in powder form and add to mixture. Stir well until ingredients are evenly mixed and consistency is smooth.
5. Add in chia, sunflowe seeds, chocolate and walnuts. Stir until evenly distributed.
6. Grease or line a 11 x 7 x 2 inches glass cooking pan (or 9 x 9 square pan, just watch as cooking times may vary slightly) and pour banana mix into pan evenly, spreading mixture into the corners.
7. Place on middle rack in oven. Cook for 25 min and rotate pan 180 degrees and let cook another 25 min or until a knife or toothpick comes out relatively dry when used to poke in the middle of the loaf. The mixture will and should still be moist due to the chia seeds, so keep this in mind. Loaf should be moist but not runny.
8. Let cool and cut into 24 pieces. Voila! Bon Appetit!

**Serve as is or top with some nut butter and sprinkle with coconut to make it an exceptionally yummy treat!
