I made this recipe the other day because for the first time I bought steel cut oats and wanted to give them a try. I thought it might be nice to make a banana loaf or something along those lines, and I didn’t really look at any recipes but I just mixed some ingredients I had into a pot and gave it a try. In the end I thought it would be better to make mini banana balls or bits (like Tim Bits but baked, sugar and gluten free, and overall way more healthy) and so I did. However I’m calling them bites because they are bit sized and I don’t even want to keep them in the same league as the unhealthy alternative. I’m not a huge baker but I’m getting more into it, I kind of experimented with these but they turned out pretty good. I am going to modify this recipe slightly to the one I made, just because I only used what I had in stock and would have added more of some things, such as the banana. I also used flax seed because it contains Omega 3 something that is one of a vegans nutritional necessities as they don’t eat anything with meat. You can also use maple syrup instead of stevia, or another scoop of vanilla vegan protein powder (I try to get one that is sugar-free). Another thing I would have done if I’d had some, is dark chocolate chips or chunks just because banana bread and chocolate is just a tad bit heavenly, but I didn’t have some. 2 cups cooked steel cut oats
1 cup frozen banana thawed
5 soaked and mashed up dates
*for lower glucose 4 packs of stevia
6 teaspoons ground flax seed
1 1/2 tbs cashew/almond butter
1/4 cup chopped nuts
3-4 tbs ground cinnamon
6-7 drops vanilla essential oil or 1 teaspoon extract
1 scoop vanilla protein powder
1/4 cup cacao powder
1/4 cup almond or rice milk (find your desired amount… add less in the beginning)
1 pack stevia
*** optional- flavoured essential oil or vanilla flavour, cinammon or cardamom***
sugarfree coconut shavings for dipping them into after
1.preheat oven to 350 degrees
2. mix all ingredients (except for final step) in a bowl and mix thoroughly
3. lightly grease 2 mini muffin trays with coconut oil
4. Roll mixture into little balls and bake for 12 min on one side…flip them and then bake roughly 5 min other side or until thoroughly cooked. remove when done and let cool
5. mix final ingredients in a small bowl except for coconut. Dip balls in liquid cocoa and roll in coconut.
6. keeps in fridge for up to a week. enjoy!
